Living in New York means living in small spaces. You’ve seen my bedroom – there is barely enough room for the bed. Even though my bedroom is not very big, my apartment has tons of storage space. My two roommates and I each have our own closet, plus an extra storage closet in the common area. We have also been blessed with a large kitchen.
Ok, large is a relative term.
It is large enough that, when I went to Costco on Sunday, I was able to buy a few things in bulk without worrying about space. Things like hummus, peanut butter, cereal, pistachios and avocados. It wasn’t until I got home that I realized I didn’t need six avocados (for only five dollars!). I guess I’m making guacamole this weekend.
I also came across pre-cooked cilantro lime shrimp (one pound for eight dollars). Even though it would spoil in three days, I could not resist. Needless to say, I have eaten a lot of shrimp these past two days.
Yesterday, I put shrimp on top of my salad for lunch (delicious) and this morning I made a shrimp omelet (even better).
Now I just have to figure out what to do with the rest of the shrimp…
